This one’s always at a hit at lunches and BBQ’s. It’s great as a side dish or a quick snack, as it’s quite light. If you’d like to turn it into a fuller meal, add some honey-and-bbq-chicken to it.
- 1 red Apple
- Packet of Quinoa & Bulgar Wheat
- Dried Cranberries
- Apple Cidar vinegar
- Multigrain Mustard
- Start off by boiling the Quinoa & Bulgar Wheat, which should take around 12 mins. Once it’s finished, run it under cold water and set aside.
- While the quinoa cools, chop up the rucola into tiny pieces, the red apple into small cubes, slice up the cranberries, and break the nuts into small pieces. I emphasize the smalland tiny because it will taste the best f you can fit a little bit of everything into a spoonful.
- Mix in Apple Cidar vinegar, Honey and Multigrain Mustard till you get the taste you desire. Personally I add 1/2 a cup of apple cidar, 2 teaspoons of multigrain, and a whole lot of honey! Stir in well.
